What I ate today #1

First working day after Xmas

Monday, first day of work after more than 2 weeks off. Felt like a zombie this morning, why can’t I get to bed in time? Can only go up from here….

Personally I love reading about, or watch videos of, what people eat, always gives me loads of inspiration. I promise to be absolutely truthful. Always find it hard to believe in the honesty of the post if the food is too pretty, too styled up. That is not what a normal day looks like, not for me at least 😁

Breakfast
Sooooooo good….

I discovered overnight oats last year, and is now helplessly hooked. I am really a creature of habit when if come to breakfast, but yesterday (since it soaks overnight) I got crazy and changed it up a bit – or I was hungry and just craved chocolate 😊.

  • 1.5 dl rolled oats
  • 1.5 dl plant milk (the one you prefer, I used oat milk)
  • 1.5 dl water
  • 0.5 tbs cacao powder
  • 0.5 tsp vanilla extract
  • 1 small ripe banana
  • 1 tbs chia seeds

Method:

Yesterday I mixed the above ingredients in a jar and stored in fridge overnight. This morning I just added strawberries as topping. Will definitely do this again. As filling and satisfying as always but with the cacao making it almost like a desert, perfect for a day like this!

Lunch
Happy green mushy peas

Lunch today was yesterday´s leftover beetroot burger with potatoes and mushy green peas.

Beetroot Burger (5 large)

  • 850 g soya mince suitable for making patties with (used Anamma formbar färs)
  • 1 finely grated beetroot
  • 1 tbs tamari sauce
  • 1-2 tbs vegan worcester sauce
  • few drops tabasco chipotle sauce
  • salt and pepper to taste

Method:

Mix the soya mince and the grated beetroot, sauces, salt and pepper and make 5 patties. Fry in a pan until they have a firm texture. They should not break apart.

Mushy Green Peas

  • 500 g green peas
  • 0.5 dl vegan full fat creme
  • salt and pepper to taste

Method:

Bring lightly salted water to a boil. Add frozen peas, and cook for 3 minutes, or until tender. Drain peas, and transfer to a blender/food processor. Add cream, salt and pepper, and process until blended, but still thick with small pieces of peas. Adjust seasonings to taste.

No Oil Roasted Potatoes

  • potatoes of choice
  • salt and pepper to taste

Method:

Cut potatoes in rings or wedges. Roast in oven on 200 C (a bit lover if you have a fan oven) for 30 min or to when they are crispy and starts to get a good colour. Add salt and pepper to taste.

Dinner
Creamy sweet potato dish by Deliciously Ella

For dinner, I made Deliciously Ella´s Sweet Potato And Black Beans Shepherd´s Pie. Only alteration was I made it oil free. Served with green beans.

Now I’m off to lie on the sofa, need it after this very long day….

  1. Oooh! Your meals looked sooo goood! Overnight oats is my go to, never get tired of it! And that beetroot burger looks so delish! Need to get more creative in the kitchen☺️. Thanks for the ideas!
